What advantages does the consumer have from gluten-free and lactose-free products?
Gluten intolerance
Gluten intolerance is often linked to coeliac disease, which is a chronic disorder of the small intestine. Gluten is a protein found in higher concentrations in wheat and in lower concentrations in spelt wheat, rye, barley and oats.
Lactose intolerance
This condition is characterised by insufficient digestion of the milk sugar lactose. Where this is not broken down quickly enough in the first part of the intestines, larger quantities reach the lower intestinal regions, where more bacteria are present, which then break down the sugar.
This results in large quantities of gases and organic acids, which in turn has an effect on the flow of water in the intestines and can lead to flatulence, stomach pains, intestinal cramps, colic, bloating, nausea and diarrhoea.
